Summer Dinner Menu

Years ago, I dated a polo player from Argentina who learned to ride horses on his family farm. By his early twenties, he was traveling the world and playing polo professionally. Like many players, he split his year between countries and spent the summers playing in San Diego, where we met.

He and his teammates loved sharing their Argentinian culture. On the weekends, he hosted traditional Asados using quebracho wood and a parrilla. We ate bread, grilled meat, and chimichurri on the open polo fields.

Before the polo season ended, he and his teammates threw a party for the players and members. The grooms were in on it too. Days before the party, they drove east and bought a live lamb. I’ll spare the details and the drama. But they slaughtered, prepared, and buried the lamb, cooking it underground until it was time for the party. The turnout was huge. The lamb was enjoyed with bread and chimichurri, and some was made into guiso de cordero—stew. At one point in the party, another player asked if I wanted to taste one of the organs, offering a bite. His face beamed with pride while my stomach flopped.

The Argentine players found a sense of home and belonging by sharing the flavors of their country with the San Diego community. Hosting a meal goes beyond food. It’s about opening your home and sharing your life and culture with others.

Last week, Chef Rocio and I collaborated to do just that. Inspired by an Argentine Asado, Rocio created the perfect dinner menu for your next summer gathering. We invited a few friends over to my house and tested out these recipes. The menu is incredible and accommodates all dietaries (for those of you who don't eat lamb). And because no one wants to be in the kitchen in the summer, this meal is cooked on the grill—Argentine style!
