A MIHO Wedding at Bandy Canyon Ranch

Nestled in the scenic hills of Escondido, Bandy Canyon Ranch set the stage for a stunning wedding celebration that MIHO was honored to design and cater. Our focus for the design was to blend the venue’s rustic charm with the couple’s vision to blend natural beauty with personal touches. Every detail was crafted to offer an unforgettable experience for the couple and their guests.

The Design

MIHO’s Experience Coordinator, Rachel, was captivated by the rustic beauty of Bandy Canyon Ranch, drawing on its natural charm to infuse the wedding with a sense of whimsy and romance. She crafted an atmosphere that felt effortlessly elegant, selecting a soft, organic color palette of creams, green, and delicate yellow accents. Delicate, patterned linens in neutral hues echoed the earthy tones of the ranch, while warm textures like rattan, wood, and natural fibers added depth and coziness to the design. Rachel worked with the florist to combine lush greenery with white blooms that were enhanced by subtle touches of soft yellow. The result was a wedding that felt timeless, magical, and perfectly in tune with the natural surroundings.

The reception tables were set with simple yet refined centerpieces that felt both grounded and graceful—perfect for the outdoor setting. Thoughtfully chosen tableware and glassware added a touch of elegance without overwhelming the natural charm of the space. The overall design seamlessly integrated with the property’s recent updates, elevating the experience while keeping Annie and Dylan’s vision front and center.

The result was a breathtaking blend of nature and sophistication, where every element—from the food to the decor—came together to create an unforgettable celebration.

The Food & Beverage

For Annie and Dylan’s wedding, our culinary team delivered a standout custom menu with the couple’s favorite items. Guests started with tray-passed appetizers, including Spam musubi and a custom pickle bar featuring a variety of house-made pickles.

Craft cocktails named after the couple’s dogs added a personal touch: "The Tito" with Tito’s Vodka, elderflower, and grapefruit, and "The Henry," an Espresso Martini with Grey Goose Vodka and Stumptown coffee. The bar also offered a curated selection of French and Napa wines, local craft beers, and mocktails, including our mock Aperol Spritz.

The first course included Salanova Lettuce with grilled avocado and Meyer lemon-dill vinaigrette, along with warm brioche buns. For the second course, we served family-style dishes like smoked beef short rib with local corn puree, squash blossom triangoli pasta, eggplant tortellini and smoked steelhead trout with strawberry BBQ sauce.

Desserts featured two wedding cakes, mini sweets, and a dessert cart with an affogato station, providing a satisfying end to the evening. We capped off the evening with late night snacks and an epic dance party.
