Recipe: Granola

I feel like I could sell this recipe on the street for money. Or wear a long trench coat and open it up to lbs of the granola goodness. We sent out a big batch of it to a handful of our friends, and they’re literally hitting us up left and right to get more granola. Yea, maybe granola sounds a little boring cause your grandma used to make it and you’re like, what’s all the fuss about? Once you eat a little bit of that crunchy crack with yogurt and fresh fruit, you’ll find yourself craving it every morning, snacking on it in the late afternoon, awkwardly palming it into your mouth. Hit up the bulk aisle in Lazy Acres, Jimbo’s or Sprouts and let’s do the damn thing!

Ok, let me preface this by saying this makes a LOT of granola. I eat a lot of granola. You should cut the recipe in half, if this is your first time making our granola. From there, you can determine your own addiction level. Also, feel free to sub any of the nuts or dried fruits. This is a great opportunity to toss in whatever random things you have in the cupboard. In past batches, I’ve added candied ginger (absolute heaven), gogi berries, sunflower seeds, pecans… you get the idea.

4 c Rolled Oats (GF)

1 c Slivered Almonds

1 c Walnuts

1 c Cashews

1 c Pepitas

1 c Coconut, shredded

¼ c+2T Brown Sugar

¼ c+2T Maple syrup

¼ c Butter, melted

¾ t Salt

1 c Cranberries, dried

1 c Blueberries, dried

1 c Golden Raisins

½ c Orange Zest (about 1 orange)

Combine oats, nuts, coconut, and brown sugar. Separately combine syrup, butter, and salt, then mix with dry ingredients. Pour onto a sheet tray lined with parchment and bake at 250*F for about 1 hr 15 min, stirring every 10-15minutes. Remove from oven and transfer to a large bowl, mix in fruit and orange zest while still hot.
